The other day I brought home a boneless pork butt, a cut that we nearly always have in the shop but can scare off customers who don’t know what to do with it.
Here’s an idea: Make carnitas. Typically people think of carnitas as being an all-day kind of thing in your slow cooker or Dutch oven, but when you make it in your pressure cooker or Instant Pot, they become an easy weeknight dinner.
Here’s how you do it: Season the pork butt all over with salt and pepper, then sear it on all sides in a cast-iron pan over high heat. Put the pork butt in your pressure cooker or Instant pot.
Mix together about two cups of chicken stock, half a large onion cut into rings, a small can of diced green chiles, a handful of smashed garlic cloves, and two tablespoons of taco seasoning (if you have a favourite homemade spice blend, go with that, but as Ina would say, store-bought is fine).
Dump the stock mixture over the pork, then set the temperature of the pressure cooker to high and let it go for 40 minutes, until the pork is all fall-apart and juicy.
Let the pork cool enough so that you can handle it. Shred the meat using a couple of forks, then crisp it up in a pan, preferably with some lard (conveniently available at Standing’s Butchery!) or a neutral oil like grapeseed.
Adjust the seasoning, and you’re good to go. Serve the carnitas with your favourite tortillas, pickled onions, cilantro, guac, whatever you’ve got on-hand. How easy is that!?!?

Hot dogs: We’ve got ‘em in both all-beef and pork.
Buns: Yep, get your Martin’s Potato Roll hamburger and hot dog buns right here.
Toppings: Make your burger your way (wait, is that a slogan or something?) with pickles, Brassica & Brine sauerkraut, Mother-in-Law’s kimchi, and a selection of fresh produce.
Sauces/condiments: If you’re grilling steaks/chops or really want to dress up your burger, check out our sauces and condiments like romesco, garlic aioli, chimichurri, yuzu mayo, and more.
