What is chateaubriand beef?
The Chateaubriand beef is the large front cut of the fillet. It is well known for the delicate beef flavour as well as being delicious and tender. A Perfect roasting joint of beef.
A classic romantic cut for two to share. We traditionally mature our grass fed Welsh Beef to enhance the flavour before our qualified butchers cut the thickest part of the fillet, hand trim off all excess fat and prepared this cut to the highest of standards. The Chateaubriand is our finest cut.
The chateaubriand cut is also known as the tenderloin, which is a primal cut. Premium cuts like the filet mignon streak comes from this part of the tenderloin.

500g chateaubriand cooking time
This will depend on how you like your beef cooked. I would say around 15 min for mid-rare, then 20 min for medium and about 25 min for mid-well.
