How to Cook Tuna in a Pan with Sesame Seeds

Method Place a large non-stick frying pan on a medium-high heat. Rub the miso all over the tuna, then pat on the sesame seeds to cover. Place in the hot pan with 1 tablespoon of olive oil and sear for 1½ minutes on each side, so it’s beautifully golden on the outside but blushing in the middle. Remove to a board to rest.

Preheat the oven to 200C/400F/Gas 6. For the tuna, season the tuna steaks with the sea salt and drizzle with the olive oil. Rub the salt and oil into the steaks. Heat a heavy-based frying pan until hot.

Ingredients

  • tuna loin 1 long, 300-400g
  • groundnut oil 1 tsp
  • black and white sesame seeds 2 tbsp
  • English mustard for brushing
  • micro leaves, baby salad leaves or chives to serve

TATAKI SAUCE

  • grated ginger 1 tsp
  • spring onion 1, finely sliced
  • soy sauce 1 tbsp
  • sesame oil 1½ tsp
  • lime juice 1 tbsp

Method

  • STEP 1

Rub the tuna all over with the groundnut oil, then season with salt and lots of black pepper. Put the sesame seeds on a flat plate. Brush a little more oil over a non-stick pan. Sear the tuna for about 20 seconds on each side. Take out of the pan and brush very thinly with mustard, then roll quickly in the sesame seeds to coat. Mix the sauce ingredients together. To serve, use a very sharp knife to cut the tuna into ½cm slices. Arrange on a platter and scatter over the micro leaves and chives. Serve with the sauce.

  • 800g sushi-grade fresh tuna, halved
  • 100g black and white sesame seeds
  • 2 tablespoons olive oil
  • Sea salt and freshly ground black pepper, to season
  • 340g egg noodles, cooked
  • 400g shelled edamame beans, blanched
  • 10g fresh coriander, chopped

THE DRESSING

  • 1 tablespoon toasted sesame oil
  • Juice and zest of 2 limes
  • 1 tablespoon Indonesian soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 1 red chilli, sliced
  • 2 tablespoons ponzu sauce

TO SERVE

  • 200g baby spinach
  • 150g Tenderstem® broccoli, blanched
