how to cook pork ribs on the grill?

You start by rubbing racks of pork baby back ribs with an aromatic mix of paprika, chilli powder, cumin, coriander, cayenne, salt, pepper and brown sugar. 

The ribs are then wrapped in foil and cooked covered on the grill over direct medium heat for 1 hour.  I personally prefer using a charcoal grill, but you could easily make these on a gas grill. 

The key is to maintain a temperature of 350°F – 400°F within the covered grill.

The ribs are then unwrapped and finished on the grill with the addition of hickory wood chips (optional) and store bought barbecue sauce. Buy Pork Ribs Online

You baste and turn the ribs a few times over 10 – 12 minutes, resulting in saucy, smoky, charred ribs.  So.  Yummy. Buy Pork Ribs Online

Normally I would recommend using an instant read thermometer to gauge the doneness of meat on the grill; however, that method can be a little tricky with this method. Buy Pork Ribs Online

It’s recommended that pork is done around 145°F, but you need to cook pork ribs to around 190°F to 200°F to really break down fat and collagen, resulting in a tender finished texture. 

Also, given that the ribs are wrapped in foil, it’s hard to figure out where to put the thermometer without unwrapping the ribs.

I’ve tested this recipe several times and have found that 1 hour over direct medium heat (charcoal or gas) will give you tender ribs that don’t fall off the bone (that’s a good thing!). 

Just make sure you’re maintaining 350°F – 400°F within the covered grill, and the ribs will turn out great every time.

You’re not really cooking the bbq pork ribs during this phase – just infusing them with flavour.

Spareribs come from the belly of the pig while baby back ribs come from the loin region. 

Baby back ribs are shorter than spareribs, and have areas of leaner meat.

I am using baby back bbq pork ribs for this recipe, because they cook faster than spareribs.

To make a dry rub for pork ribs, simply mix together paprika, ancho chilli powder, cumin, coriander, cayenne, salt, pepper and brown sugar exact measurements below. 

This particular blend of spices enhances the sweetness of the pork ribs while providing some savoury balance. 

Cayenne pepper adds a spark of heat while ancho chilli powder lends some complex sweetness. 

Don’t use smoked paprika here, because the ribs will pick up plenty of smoky flavor from the grill.

For the dry rub:

  • 2 tablespoons paprika
  • 1 tablespoon kosher salt
  • 1 tablespoon freshly ground black pepper
  • 1 tablespoon brown sugar
  • 1 tablespoons ancho chilli powder or any chilli powder you have on hand other
  • 2 teaspoons ground cumin
  • 1 1/2 teaspoons ground coriander
  • 3/4 teaspoon cayenne pepper

For the ribs:

  • 2 – 3 racks pork baby back bbq pork ribs (about 2 1/2 pounds each*)
  • A couple handfuls of hickory wood chips, soaked for at least 30 minutes (optional)
  • 1 cup prepared barbecue sauce

Place all of the dry rub ingredients in a small bowl, mixing to combine.

Using a sharp knife, remove any silver skin on the back of each rack of ribs.

I like to use a knife to release an edge, and then pull up it off with a paper towel.

Coat each rack of bbq pork ribs evenly with the rub, then wrap tightly with 2 to 3 layers of foil.

If you’ve got standard sized aluminium foil, you’ll probably need 3 layers.

As you are wrapping, be careful not to pierce the foil with the ribs.

Preheat a charcoal or gas grill to medium heat. Cook ribs covered over direct heat for 1 hour, turning twice to ensure even cooking.

You’re looking to maintain between 350°F – 400°F within the covered grill.

Take the ribs off the heat and let rest for 10 minutes.

Remove the foil and discard any liquids.

Meanwhile drain the hickory chips (if using) and scatter over the coals or add to the smoker box of a gas grill.

Once smoking, return the bbq pork ribs to the grill bone side down and using a brush, baste the top of the ribs with barbecue sauce.

Cook covered for 10 – 12 minutes until glaze is charred in spots.

You’ll want to flip the bbq pork ribs and baste twice during this time period.

Let rest for 5 minutes before serving.

Be sure to serve some extra barbecue sauce on the side
