- 4 cloves garlic, peeled and thinly sliced

Method
- Preheat the oven to 180 C / Gas mark 4.
- Slide the sliced garlic underneath the skin of the young guinea fowls. Combine the olive oil, salt, pepper and herbs. Rub inside and outside of each guinea fowl taste with the herb mixture.
- Place in a roasting tin (preferably on a rack set in the tin) and roast in the preheated oven for approximately 1 hour, or until guinea fowl are cooked through and juices run clear near the thigh. Cooking time will vary depending on the size of the wild guinea fowl.

Most predators like to dig around the perimeter of a game bird flight pen.
These types of predators, including rodents and mink, can be easily thwarted by employing galvanized hardware cloth.
Bury the galvanized wire mesh 12” – 20” into the ground around the flight pen’s perimeter.
In addition, the galvanized wire mesh weave should be a specific size.
To prevent predators like raccoons from reaching through the mesh weave and capturing a game bird, the mesh openings should be no bigger than 1 square inch.
Correctly installing galvanized hardware cloth will create a safe environment for your game birds.
For larger pens, 1” gaw wire is used rather than expensive hardware cloth.
Installing 2” netting as a top for your pen will provide some protection as well against raptor type birds, and also prevent ground animals from crawling up the side wire and easily entering the pen.
It also is important to plant ground cover in your pen to protect your birds from extreme weather and again from raptors.
It is important to plant something like corn or sorghum as these plants provide a stalk that is difficult to knock down as birds move through it.
In the early spring, broadcast the seed in your pen so the cover comes up very thick.

With a bit of knowledge, however, you can make sure your birds stay beautifully tender, enabling you to enjoy this delicious meat at its best.
Here are several things you can do to improve the tenderness of game birds:
Brining
Essentially this involves sitting the bird in a saltwater solution, ideally overnight.
Dissolve 140g of salt and 2 tbsp sugar in 1 litre of water.
You can add ingredients such as juniper berries, peppercorns, bay leaves and herbs to the brine to enhance the flavour if you like.
Heat until boiling then add another litre of cold water and leave it cool to room temperature.
Add the bird and place in the fridge for 4 hours or overnight.
Once you’ve brined your game bird, you can grill, fry or roast it until it’s a lovely golden brown colour.
