  • 20 king prawns, defrosted to pack instructions
  • 1 tbsp vegetable oil
  • 2cm piece of ginger, peeled and finely chopped

  • 1 tsp light soy sauce
  • 1 tbsp Shaoxing rice wine
  • 2 spring onions, roughly chopped

Method

  1. Heat the oil in a wok or large frying pan over a medium-high heat and fry the ginger and garlic for 30 secs, stirring occasionally.
  2. Add the prawns and cook for 4-5 mins, stirring occasionally, until they turn pink and are cooked through.
  3. Add the soy sauce, rice wine and spring onions.
  4. Stir to combine, adding ketchup, if you like.
  5. Remove from the heat and serve with boiled rice and pak choi, if you like.
