Ingredients
- 2 eggs
- 1 tablespoon heavy cream or crème fraîche
- 1 tablespoon butter
- 3 tablespoons salmon roe

- Freshly ground black pepper
Directions
Whisk eggs with cream and set aside.
In a skillet over medium heat, melt butter. When butter has melted, add eggs, and whisk to form eggs into a curd-like texture.
When eggs are halfway set, add roe and stir around briefly, then turn off heat and let the heat of the pan continue to cook the eggs for a few more seconds.
Garnish with herbs and black pepper.
Serve immediately.
