Sticky Chilli Garlic Squid Recipe

This sticky garlic squid is an ideal easy sharing dish, ready in just 15 minutes.

Squid is stir-fried in garlic and chilli until caramelised, then topped with crispy capers for a simple finishing touch. Squid Fresh Caught 1kg

Serve with plenty of fresh herbs and lemon to squeeze over.

Ingredients

  • 4 tbsp olive oil, plus 2 tsp
  • 60g capers, drained
  • 1 tsp paprika
  • 4 garlic cloves, finely chopped
  • 1 red chilli, deseeded and chopped
  • 750g squid, defrosted if frozen, sliced into 0.5cm rings
  • 2 lemons, 1 juiced, 1 cut into wedges
  • 10g fresh flat-leaf parsley leaves, chopped

Method

  1. Heat the 2 tsp oil in a nonstick frying pan over a medium-high heat and fry the capers for 30 secs until crispy.
  2. Remove with a slotted spoon and transfer to a mixing bowl with ½ tsp paprika. Toss together.
  3. Wipe out the pan and heat 2 tbsp oil over a high heat.
  4. Add half the garlic and chilli and stir-fry for 10 secs.
  5. Add half the squid in an even layer.
  6. Cook for 1 min until it starts to turn golden, then stir-fry for 3-4 mins until cooked. Season with salt, half the lemon juice and half the parsley.
  7. Mix and transfer to a warm serving dish.
  8. Repeat with the remaining squid.
  9. Top with the capers and remaining paprika and parsley
  10. . Serve with lemon wedges.
