How to make a vegan dog

  • Prepare the onion sauce by cooking the onion over medium-high heat and then adding in all the remaining ingredients.
  • Cook for 10 minutes and set aside.
  • Next, cook the vegan sausages over medium-high heat.
  • Fill each bun with one sausage. 
  • Top with 1 tbsp of sauerkraut, some onion sauce, and spicy brown mustard to taste.
  • Serve immediately and enjoy!

‘The bangers, pickled cabbage and beer-braised onions are a wicked combination,’ says Derek.

‘The flavours work so well you’ll want to dive in for another winning round.

Ingredients

  • 150g red cabbage, cored and thinly sliced
  • 1 tbsp cider vinegar
  • ¼ tsp caraway seeds, toasted (optional)
  • 2 tbsp sunflower oil​
  • 3 onions, thinly sliced
  • 250ml German beer (or other vegan beer)
  • 350g pack Mexican Kitchen 6 chorizo-style bangers
  • 6-pack soft white hot dog rolls
  • 6 slices of free-from coconut oil alternative to jalapeño & chilli cheese slices (from 180g pack)
  • 4 tbsp wholegrain mustard
  • 5g fresh chives, snipped, to serve
  1. Toss together the cabbage, vinegar, caraway seeds and ¼ tsp salt in a bowl; set aside in the fridge for at least 20 mins.
  2. Heat 1 tbsp oil in a large, heavy frying pan over a medium heat.
  3. Fry the sliced onions for 10 mins, stirring every few mins until softened and well browned. Stir in the beer, reduce the heat to low and cook for a further 15 mins, stirring occasionally, until all the liquid is absorbed and the onions are very tender.
  4. Season with pepper.
  5. Meanwhile, heat the remaining 1 tbsp oil in a separate frying pan over a medium heat and fry the bangers to pack instructions.
  6. Preheat the grill to medium.
  7. Split the hot dog buns in half and transfer to a baking tray.
  8. Divide the cheese-alternative between the buns, then grill for 4 mins until melted.
