How to Cook Goat Ribs so they are Tender

Braising is the preferred method for cooking tougher cuts of goat. Goat cuts that are braised are always cooked until well done because moist heat cooking methods permeate the goat meat with hot liquid and high temperatures, creating tender and flavorful meat.
Goat Ribs
Ingredients
- 2 racks of goat ribs
- olive oil (100 milliliters + a few glugs)
- 4 cloves of garlic, peeled and crushed
- a few sprigs of thyme
- a few sprigs of a few sprigs of rosemary
- a handful of maris piper potatoes
- 2 slices of stale bread
- 1 lemon, zested
- a handful of parsley
- 1 small savoy cabbage
- 1 glass of white wine
- chicken stock (100 milliliters)
- a bunch of tenderstem broccoli
- a handful of spinach
Cooking Instructions
- Step 1
Wash your goat ribs and drain excess water
- Step 2
In a bowl, mix all your ingredients. Add your goat ribs and cover. Left mine in the fridge for 2hrs

Preheat your oven, Spread the ribs on the tray, cook at 200° for 1hr. I added some onions after 45 minutes

You can choose not to cut your ribs into half. I forgot to warn my butcher. Boil your ribs with ginger and garlic for about 10 minutes or till soft.

In a different cooking pot, saute your onions and garlic in hot vegetable oil till translucent.

Add in your ginger, salt, and other spices(You can use a single spice or a mix of the spicy blend)

Add in your tomatoes and tomato paste. Let it cook for a few minutes.

Add in your goat ribs and stir. Add a little cornstarch and the sliced green bell peppers.
- Step 6
Let it cook for a while since we had boiled it. Add in the soy sauce.
- Step 7
Stir to mix everything well. Garnish with coriander or parsley.
- Step 8
Serve with your stir-fried traditional vegetables.

Other seasonings of your choice optional some examples could be curry powder, fresh herbs such as chopped thyme and rosemary, spicy seasonings like blackening mix, or anything else you may like.
Instructions
Trim as much as you would like the fat cap from each goat rack of riblets.
Season the ribs liberally with salt and pepper, and any other spices to taste. Then, allow to marinate for preferably 12-24 hours.
Next, smoke the ribs at 250 degrees for 2-2.5 hours, or until just tender.
Remove the ribs, chill to make cutting easier, then grill or cook in a pan until hot throughout. From here, the ribs can be made 3-4 days in advance.
The ribs can also be roasted in the oven wrapped in parchment or in a covered container.
Save the fat that renders out for cooking potatoes or leafy greens.
