Follow these steps to prepare cucumber

1 Rinse and dry the cucumber.

Place on a chopping board. Use a small sharp knife to trim the ends.

2 You can leave the seeds in, or to remove them, use a teaspoon to scoop out the seeds. Discard seeds.

How to slice a cucumber: Begin by cutting the cucumber in half length-wise. Repeatedly slice each part horizontally, creating thin half-moon slivers.

How to cut cucumber into sticks: Trim the ends off of the top and bottom and then halve the cucumber. Quarter each piece vertically.

How to dice a cucumber: Cut the cucumber in half, then cut each piece in half again lengthwise. Cut into even-sized sticks, then take the sticks and cut horizontally into equal-sized diced cuts.

How to make Pickled Cucumbers

1 Wash 750g small Lebanese cucumbers and dry well.

Thinly slice and layer in a clean, dry 3 litre (12-cup) jar alternately with the 2/3 cup fresh dill leaves and 2 teaspoons black peppercorns.

2 Combine 750ml (3 cups) water, 125ml (1/2 cup) vinegar and 1 1/2 teaspoons salt in a medium saucepan.

Bring to the boil over medium-high heat, then carefully pour the hot liquid over the cucumbers in the jar.

Seal the jar immediately.

Set aside for at least 1 week to pickle before serving. Store the jar at room temperature until opened.

Can you freeze cucumber

Yes, but frozen cucumbers taste milder and have a spongy texture. Instead, take leftover seeds, fill an ice-cube tray and freeze for up to two months.

Use them in smoothies, green juices, cocktails and dips.

Tips:

  •      When slicing cucumbers, use a spoon to scoop out the seeds from the inside flesh to avoid a soggy salad.
  •      To change up the way traditional rounds look, you can create a pattern by peeling four strips off the skin, leaving stripes of skin in between. Finish by cutting.
  •      When making cucumber ribbons, apply firm pressure while peeling to make sure the ribbons come out the length of the cucumber.
